Roasted Red Pepper Mac N Cheese from ‘Isa Does It’

With the success of the butternut squash bisque this weekend, I decided to stay in the same cookbook for dinner last night, Isa Chandra Moskowitz’s new cookbook Isa Does It. I went for the kid-friendly ‘mac n cheese’ and it did not disappoint!  I pretty much followed the directions on this one.  Isa calls for 8 ounces of pasta, I went with a 12 ounce bag, and since I had absolutely no leftovers, I think I could have gone with 16 ounces, or added some veggies into the mix.  There was an option to bake the mac n cheese, and I opted for the added cooking time, would definitely do it that way again.

Was it easy?  Yes, the hardest part is waiting for the pasta water to boil.  You know what they say about watched pots.

Did the family like it?  Yes, everyone had seconds and there were no leftovers at all.

Would I make again?  Yes, but not tonight, as requested by the 8 year old.  It will definitely become a regular meal in my house.

I’ve made other vegan mac N cheese dinners, this was probably my favorite.
