First, I have to share, if you haven’t been to www.happyherbivore.com, you need to go visit her website. Lindsay cooks like I do, whole-foods based plant food with no added oils. Her recipes are easy and the ingredients are all easily available. I have a copy of her cookbook, “Happy Herbivore”, but this recipe is also on her website, under Hippy Loaf.
I didn’t make many changes, to her recipe, it looked fabulous, and I had everything on hand. She doesn’t use oil, so I didn’t have to eliminate any. My only changes were that I used a package of steamed lentils from Trader Joes instead of a can of black beans. When I had all of the loaf mixed in the bowl, it didn’t look like a lot of food (have I mentioned I’m not a good judge of this, there was plenty of food, LOL) so I added in the rest of the lentils (probably an extra cup to cup and a half) and when I made the quinoa, I made more than what was needed, and since I added in more lentils, I added in the extra quinoa too. (again about a cup to a cup and a half). It tasted fabulous, and was a big hit with everyone in the house. It did not hold its shape as a loaf, and that was probably because of the extra lentils and quinoa that I added. I served it with “Dirty Mashed potatoes, cheezy style” Mashed potatoes are on her website, dirty means leave the skin on, and cheezy was achieved by sprinkling nutritional yeast on top. A side of steamed broccoli, topped with nutritional yeast completed the dinner. The little guy even had seconds of the mashed potatoes and broccoli.
