This is a favorite in my house. I usually make 2x the amount just to have left-overs!
1 large or 2 small eggplants, cubed (peeling is optional)
1 package of baby bella mushrooms, sliced
2 tofurky sausage links, sliced
1 can of fire roasted diced tomatoes
1 small jar of FF marinara sauce (I like Trader Joe’s Pizza Sauce)
1 medium zucchini diced or several baby zucchini diced or sliced
Italian spices & garlic
1/4-1/2 Cup nutritional yeast
water sauté mushrooms with Italian spices and garlic, then add in the eggplant and zucchini. cover and simmer, letting the veggies get soft. Add in the tomatoes and tofu sausage. Add in tomato sauce, stir, and cook covered for a few minutes. Add in nutritional yeast, stir, and turn off heat. Let sit for 5 minutes before serving.
Good over pasta or rice, or a mix of whole grains.
