I’ve been drooling over a few recipes in Lindsay Nixon’s Happy Herbivore cookbook, and last night decided to give them a whirl. I think the black bean burgers on her website are very similar to the ones in the cookbook. These were ultra easy, and were a big hit with the whole family. In fact the little guy asked us not to have seconds, he wanted the leftovers for lunch today at school. I followed the HH recipe with just the addition of an extra 1/2 Cup of beans since I wanted to make 4 burgers, not 3. Good thing I did, the child is now enjoying it for lunch.
For the sweet potato fries, I bought 2 packages of sweet potato spears from Trader Joe’s, and seasoned with Trader’s Joe’s African Spice blend. (I love the new spice blends from Trader Joe’s that come in self grinding containers). My mistake was trying to bake everything, the fries weren’t ready with the broccoli or the burgers and we switched the oven to broiling to finish them up. I’d be inclined to broil them next time.
Roasted Broccoli – I bought purple broccoli at the farmer’s market this weekend, and the farmer told me it would green up if I boiled or steamed it, but would retain it’s color if I roasted it. I chopped it up, put in a pan and seasoned with the same grinder spices as I used for the potatoes. (it was a blend of paprika, garlic, salt and basil). I’d guess it tool 15-20 min at 350.
